WHO? PAX-AM is a collaboration between Executive Chef Adam Dorris, Restaurateur Shepard Ross of Glass Wall & Brooklyn Athletic Club and Hoteliers Dan and Mark Zimmerman of La Colombe d’Or Hotel & Zimm’s Bar.

WHAT? PAX-AM is a neighborhood restaurant & bar featuring modern American fare by Executive Chef Martha DeLeon. We seek out the best local meat, fish and produce along with an innovative, well curated, cocktail, beer and wine program to provide the best possible ingredients for our guests. We feature an all-American, small producer wine list representing many European varietals cultivated to represent a sense of true terroir and showcase the diversity available in the U.S.

WHEN? PAX-AM opened its doors on August 2nd, 2014.

WHERE? PAX-AM is located at 4319 Montrose Blvd in Houston’s historic Montrose/Museum District area in a charming building that has been in the Zimmerman family for over 40 years.

WHY? TEAM PAX-AM believes that true hospitality lies in the desire to better the lives of our fellow human beings. We hope to enrich our guest’s experiences via thoughtful and attentive service, by providing the freshest ingredients, prepared with care, craft and ingenuity and creating a sense of community and comfortable atmosphere to share these experiences with their friends, family and colleagues.

HOW? Sometimes, things are just meant to happen. The stars and planets align, lightning strikes and “BOOM” something very special happens. After leasing a property to Shepard Ross, Dan Zimmerman realized a restaurant space was coming available adjacent to his neighborhood bar, Zimm’s. The two friends chatted about the space and decided to join forces to bring a unique restaurant & bar to Montrose, a place that they would like to frequent. Days later, as fate would have it, Shepard ran into Chef Adam Dorris, who recently returned from the west coast, where he was exploring the cutting edge culinary scene. An impromptu, secret test dinner ensued, showcasing Chef Adam’s incredible skill at combining the freshest local ingredients with his extensive culinary skills in butchering, pickling, smoking, brining and fermenting. With each incredible course, the newly formed TEAM PAX-AM knew that Chef Adam was the man to helm the kitchen on this new venture!

WHAT'S IN A NAME? Our restaurant’s moniker, Pax Americana, is derived from the Latin for “American Peace”. This phrase was commonly used to describe the era of peace between the great nations after The United States came out of isolation to help win World War II. We feel it represents a unique period when U.S. culture spread globally, while also allowing global, cultural influences back in. Our dedication to sourcing from U.S. small, independent businesses is our way of recognizing and supporting local farms, ranches, wineries, distilleries and breweries that make this country so great.
